D.O. DEHESA EXTREMADURA
The pig production area suitable for this DO consists of the pastures in the provinces of Cáceres and Badajoz.
The production area comprises 40 municipalities of Badajoz and Caceres 45, located mainly in the mountain regions of southwest Extremadura Badajoz-Villuercas Ibor, Cáceres-South Gredos, Sierra Montánchez and Sierra de San Pedro. This is the only D.O. produces only products with pigs in their own region.
The continental climate (with Atlantic influence) of Extremadura, provides a high thermal amplitude, which promotes proper maturation of hams, ranging from 41 degrees in the summer at 3 degrees in winter. The average rainfall is medium to high, depending on the area, with most rain in the cold.
How to recognize a D.O.P. Iberian ham Dehesa de Extremadura
Exterior shape: Long, stylish, shaped by cutting "V", keeping the hoof.
Weight: 4.5 Kg Minimum
Color and appearance to cut: color from pink to purple, with fat infiltration in muscle mass.
Taste and aroma: Meat delicate, slightly salty or sweet. Pleasant aroma.
Texture: Slightly fibrous
Fat: Bright, white-yellow color, aromatic and pleasant taste.
