D.O. Pedroches

The pig production area suitable for the DO, is located in the northern province of Cordoba, in the call Pedroches Valley, or Valley of the acorns also considered one of the largest oaks dehesa Europe.
Part of D.O.P. about 32 municipalities, in particular the areas located more than 300 m. high to achieve the optimum climate.

Weight: 4.5 Kg Minimum
Appearance: Stressing the coloration of their fungal flora: white, gray, dark blue or violet.
Color and appearance to court: from pink to purplish red., With fat infiltration in muscle mass.
Taste and aroma: Meat delicate, slightly salty or sweet. Pleasant and distinctive aroma.
Texture: slightly fibrous texture.
Fat: Bright, white, pink or yellow, aromatic and pleasant taste.
